Zesty Chicken Soup

This soup recipe has wonderful flavor! It is the perfect blend of savory and zesty flavors, and a super satisfying meal, especially in the colder months. Make your family a meal that is rich in nutrients, while taking no more than 20 minutes to whip up.

Ready in 30ish minutes
Serves 6-8 people
Ingredients
4 cooked chicken breasts that are chopped or shredded
2 onions
2 carrots
2 celery sticks
3 garlic cloves
6 cups of coconut milk (Chicken stock is a good alternative)
4 tbsp of lemon juice
1/2 tsp lemon zest
1 tbsp of ginger powder or fresh ginger (grated)
2 tbsp of coriander seeds
Salt 7 pepper to taste
Preparation
Chop the onions, carrots and celery. Dice the garlic.
Bring the coconut milk to a boil and add all of the ingredients: the vegetables, spices, lemon and chicken.
Cook for 15 minutes or until the carrots are soft.
Enjoy!
Tips
You can take the time to saute the onion and garlic in a tbsp of oil before you add them to the broth. This will create softer onions in the end, along with richer flavor!
Serve with a side of homemade bread.
