    Glazed Vanilla Scones

    My mother's scone recipe is simple, delicious and so indulgent! This is truly my family's favorite recipe for that perfect Sunday treat. Have a delicious breakfast dessert coming out of the oven in under 30 minutes!


    Ready in under 30 minutes

    Makes 8 scones

    Ingredients

    • 2 1/2 cups of flour (Spelt or Einkorn is recommended for the nutrients)

    • 1/2 tsp of salt

    • 1 tbsp of baking powder

    • 1/3 cup of coconut sugar (or sugar of preference)

    • 3/4 cup of cold unsalted butter

    • 1 egg

    • 1/2 cup of milk

    • 1 tbsp of vanilla extract


      Vanilla Glaze: (mix it all and pour over cooled scones!)

    • 1 1/2 cups of powdered sugar

    • 2 tbsp of water or milk

    • 2 tbsp of melted butter

    • 2-3 tsp of vanilla extract


    Preparation


    1. In a large mixing bowl, combine the flour, salt, baking powder and sugar.

    2. Cut in the cold butter using a pastry cutter or fork until the butter is well combined, and the mixture resembles coarse crumbs.

    3. In a separate bowl, whisk the egg, milk and vanilla extract together.

    4. Pour the wet ingredients into the flour/butter mixture and mix until all the ingredients are combined.

    5. Do not overmix.

    6. Grease or line a baking sheet. Dump the dough onto the sheet and, using your hands, form the dough into a circle until it is about .5–1 inch thick.

    7. Bake at 425°F for 8–13 minutes, depending on how thick you make them. The bottoms should be golden brown and several light brown spots appearing on top.

    8. Cool the scones before you apply the glaze.


    Tips

    1. Adding spices to the flour mixture, such as cinnamon, nutmeg or clove (or all of them) is a tasty way to "spice" up your scone.😉
