Rosemary Baked Chicken

This is one of my children's favorite dinners. Perfect for the colder months, this hearty recipe makes an absolutely delicious chicken! Rosemary is known to have anti-inflammatory and antioxidant properties and it goes fabulously with baked chicken. Simply add a few baked potatoes with butter or a side of rice, along with a fresh salad and you will have a simply delicious meal.

Serves 6 people
Ingredients
1 whole chicken
2-4 fresh rosemary sprigs or 3 tbsp of dried rosemary
1 lemon
3 garlic cloves
salt and pepper to taste
2 tbsp of olive oil
3 tbsp of butter
Preparation
Preheat the oven to 400°F.
Slice the lemon in half and mince the garlic and rosemary.
Rinse and dry the whole chicken, making sure the inside is cleaned out and empty.
After you have patted the chicken dry, place the garlic, lemon and 1 tbsp of rosemary inside the cavity of the chicken.
Next, drizzle the olive oil over the chicken and sprinkle the remaining rosemary along with salt and pepper all over the top of the chicken.
Bake the chicken, breast side up, on a roasting pan for about an hour or until the internal temperature of the breast meat reaches 165°F.
Tips
After the chicken is baked, you can broil it for 2-4 minutes to gain a nice crispiness in the skin.
