    Italian Sausage Omelet

    An omelet is one of the quickest ways to start your day with a high-protein meal! This recipe is easy to make and you can customize however you like.

    Serves 1 person


    Ingredients

    • 3 eggs

    • 1/2 of an onion

    • 1 garlic clove

    • 1/2 cup of Italian sausage, cooked and crumbled

    • 1 cup of spinach

    • 2 tbsp of olive oil

    • salt and pepper to taste


    Preparation


    1. Diced the onion and saute it in a frying pan with 1 tbsp of oil. While the onion is cooking, mince the garlic. When the onion is almost translucent, 5ish minutes, add the garlic and the spinach. Cook for another minute. Turn off the pan and add the sausage. The leftover heat with warm the sausage.

    2. Heat and pour 1 tbsp of oil in a second pan. Keep the temperature at medium to low heat. Whisk the eggs in a small bowl.

    3. Once the pan is hot, pour the egg into the pan and allow it to cook for about a minute.

    4. Then, add the vegetable/meat mixture to one side of the egg.

    5. Gently, fold the other side over the top of the mixture and allow the eggs to finish cooking.

    6. Season with salt and pepper and enjoy!


    Tips

    1. Other wonderful ingredients to add to your omelet: cheese, bacon, broccoli, zucchini, olives, mushrooms and bell pepper.

    2. Also, top once the omelet has cooked, top it with: salsa, freshly diced tomatoes or avocado.
