    Corned Beef & Potatoes

    There is nothing like the comfort of a corned beef and potato meal. As you clean your morning breakfast, prepare this to sit in the slow cooker and come back to a hearty, delicious meal!

    Serves 3-5 people



    Ingredients

    • 1 lb. chopped corned beef

    • 1 lb. chopped russet potatoes

    • 1 cup of chicken or beef stock

    • 1 onion

    • 2 garlic cloves

    • 3 tbsp olive oil

    • 2 tbsp Worcestershire sauce

    • 1 tbsp oregano

    • 1 tbsp thyme




    Preparation

    1. Oil the inside of a slow cooker.

    2. Place all of the ingredients into the slow cooker and toss to combine.

    3. Cover and cook on high until the potatoes are tender, about 4-5 hours.

    4. Check occasionally, and if needed, add more broth or water.

    5. Once it is finished add salt and pepper, if desired.


    Tips

    1. Other delicious additions to this pot are carrots and cabbage.

    2. This meal is also tasty when served with a fried egg and/or a side of Irish soda bread.
