    A Simple Queso

    In my family, we eat a LOT of Mexican food. It is one of our favorite cuisines due to all the delicious savory flavors, the versatility of dishes, and it is a relatively healthy meal option. I like to have a healthy delicious queso to serve along with the meal. This recipe is quick and has a variety of options to be tailored to your own taste!



    Ready in 5ish minutes

    Serves 5-7 people



    Ingredients


    • 3/4 cup of cheese (Cheddar, White American, Pepper Jack or Monterey Jack)

    • 2 tbsp of whole wheat flour

    • 2 tbsp of butter

    • 1 cup of whole milk

    • 1 small can of green chilies

    • 1 tsp of cumin powder

    • 1/2 tsp of onion powder (or 1/4 of a whole onion sautéed in butter)

    • 1/2 tsp of garlic powder (or 1–2 cloves of garlic, minced, and sautéed in butter)

    • salt and pepper to taste


    Preparation


    1. Over medium heat, melt the butter in a pan and whisk in the flour.

    2. Slowly, add in the milk until combined and thickened, about  2–4 minutes.

    3. Add the cheese, onion powder, garlic powder, cumin and green chilies.

    4. Reduce heat and continue to stir until the cheese has melted, and the spices become aromatic. Add salt and pepper to taste.

    5. Enjoy!


    Tips

    1. Consider adding jalapeños (for a spicy sauce), diced tomatoes, a squeeze of lime juice or diced fresh cilantro for more flavor!
