    Taco Salad

    Here is another refreshing salad recipe! It's so easy and so delicious! This taco salad recipe is one that I love making for lunch during hot summer days. It serves as a fresh lunch that also gives your body the nutrients that it needs!



    Ready in 5ish minutes

    Serves 2-4 people



    Ingredients


    • 2 cooked chicken breasts, chopped or shredded

      *You can also use 2 cups of ground red meat that is cooked with a little taco seasoning.

    • 6 cups of salad

    • 1 sliced avocado

    • 1 cup of cheese, raw or homemade cheese is best. Any type of cheese is delicious on this salad, but cheddar or Colby jack are standard choices.

    • 1/3 cup of olive oil - I love using Bragg's olive oil!

    • 1 cup of salsa

    • Optional: a healthy tortilla chip (without seed oils) for dipping!


    Preparation


    1. Mix the salad, the protein, the avocado and the cheese in a large bowl. Then, plate the desired amount of food.

    2. Next, mix the salsa and olive oil in a separate bowl and use as dressing.

    3. Enjoy!


    Tips

    1. Other delicious topping suggestions: corn, diced onion, chopped olives or tomatoes, homemade queso and hot sauce.
