    Taco Bowls/Instant Pot

    This recipe is great for beginning cooks and if you do not have an Instant Pot, then it is time to get one! Making taco bowls with an Instant Pot is quick and easy, a really great one-pot nutritional meal.


    Ready in 30ish minutes

    Serves 8-10 people



    Ingredients

    • 1 lb. of ground beef or game

    • 2 tbsp of olive oil

    • 1 medium white or yellow onion

    • 1 tsp garlic powder

    • 1/2 onion powder

    • 1 package of taco seasoning

    • 1 15 oz. can of pinto beans

    • 2 cups of salsa

    • 1 4 oz. can of diced green chiles

    • 1 1/2 cups of basmati rice

    • 1 3/4 cups of chicken broth or water


    Preparation


    1. Press "saute" on the Instant Pot and brown the meat in the olive oil. Chop the onion.

    2. Once the beef is close to being done, add the onions. Cook until the onions are soft and close to being translucent.

    3. Next, add the garlic and onion powders and the taco seasoning. Mix it well with the meat and onions.

    4. Then, layer the beans, green chiles, rice and salsa.

    5. Do not stir the pot. Pour the broth over all of the layers, making sure all of the ingredients are submerged.

    6. Put the lid on the pot and seal the steam vent. Press the "manual" button and then add 8 minutes and let cook.

    7. Once the pot has finished cooking, do a quick release of the pressure.

    8. As soon as you are able to open the lid, gently stir a few times, mixing the ingredients together and enjoy!


    Tips

    1. Toppings for the taco bowl: lettuce, shredded cheese, fresh tomatoes, olives, jalapenos, guacamole, sour cream, salsa and tortilla chips.
