    Spelt Spiced Cake

    There is nothing more cozy than sitting down with your favorite hot drink and a slice of this delicious spiced cake! It is one of my favorite fall recipes and my children would eat it all in one sitting if I allowed it. It's a simple treat that is ready to eat in under an hour!


    Ready in 30ish minutes

    Serves 6-8 people



    Ingredients

    • 1/2 cup of butter

    • 2 cups of brown sugar

    • 2 cups of spelt flour

    • 1 tbsp of ground cinnamon

    • 1 tsp of ground nutmeg

    • 1/4 of ground clove

    • 1 beaten egg

    • 1 tsp of baking soda

    • 1 cup of buttermilk

    Preparation


    1. Preheat the oven to 400°F.

    2. Mix the butter, brown sugar, flour, cinnamon, nutmeg and clove together with a fork until crumbly. Set aside 1 cup of this mixture for crumb topping.

    3. Then, mix the egg, baking soda and buttermilk together and add to dry ingredients.

    4. Grease a 9x13 pan and pour mixture into the pan.

    5. Sprinkle the remaining 1 cup of crumb mixture on top.

    6. Bake for 20 minutes or until golden brown and a toothpick comes out clean when stuck in the center.

    7. Enjoy!


    Tips

    1. You can also add 1/2 cup of walnuts or pecans and/or 1/2 cup of oats to increase the heartiness of the cake.
