    Ready in 3-4 hours

    Serves 6-8 servings

    Ingredients

    • 1/2 cup of sourdough starter

    • 1 cups of warm, filtered water

    • 1 tsp of salt

    • 3 cups of flour (Spelt or Einkorn is recommended for the nutrients. Einkorn does a little better in regards to the texture.)

    Preparation

    1. Place the sourdough starter and water into a bowl and mix well.

    2. In another bowl, add the flour and salt and mix well.

    3. Combine the starter mixture with the flour and form into a ball using your hands.

    4. Cover the bowl and rest for 20-30 minutes.

    5. Remove the ball from the bowl and knead with your hands, folding it over many times and then forming it into a round ball.

    6. Place the dough on a sheet of parchment paper that has been dusted with flour and cover with a cloth. Allow to rise for another 1 1/2 - 2 hours until the bread has doubled in size.

    7. An hour before you are ready to bake your bread, place your dutch oven into the oven and preheat to 500°F.

    8. When the dough has doubled, it is ready to bake. Carefully using the corners of the parchment paper, place your dough into the hot dutch oven and cover with lid.

    9. Bake for 30 minutes. Then, remove the lid and bake for another 5-10 minutes.

    10. Transfer bread to a cooling rack and do not cut into it for another 30 minutes to allow the bread to finish cooking.

    Tips

    1. When baking, you may have to account for the altitude. Generally, higher altitude means you may have to increase liquid and oven temperature, while decreasing baking time. Do your research and adjust the recipe according to your climate.
