    Pumpkin Waffles

    Are you looking for a hearty, healthy waffle recipe? Here it is! These pumpkin waffles are wonderful to make in the fall and are so deliciously filling.



    Ready in 40ish minutes

    Makes about 14 square waffles


    Ingredients

    • 3 cups of flour (Spelt or Einkorn is recommended for the nutrients)

    • 2 tbsp of baking powder

    • 1 tbsp of Ceylon cinnamon

    • 3/4 tsp of salt

    • 1 15 oz. can of pumpkin puree

    • 1 1/2 cups of milk

    • 6 eggs, separated

    • 3/4 cup of maple syrup

    • 1 tsp of vanilla extract



    Preparation


    1. Preheat your waffle iron and be sure to grease it well with butter or oil.

    2. In a large bowl, mix the flour, baking powder, salt, and cinnamon together.

    3. In another bowl, whisk the egg whites until they form stiff peaks.

    4. In a third bowl, whisk the egg yolks, pumpkin puree, milk, syrup and vanilla.

    5. Then, add the egg yolk mixture to the dry ingredients and mix well.

    6. Next, fold in the egg whites. Do not over-mix.

    7. Pour the batter onto the waffle iron (about 1/3-1/2 cup).

    8. Cook and enjoy!


    Tips

    1. Whipped cream and toasted coconut, or a fruit medley, make excellent toppings!
