Ready in 1 hour 15ish minutes

    Serves 12 servings

    Ingredients

    • 4 cups of spelt flour (or another ancient grain that you prefer)

    • 3 tsp of salt

    • 2 tsp of instant yeast

    • 1 1/2 cup of warm water (100°F)

    • 1 tsp of honey

    • 1/2 cup of plain yogurt

    • 2 tbsp of olive oil

    • Optional spices: garlic powder, onion powder, cumin, fennel, rosemary or sesame seeds

    Preparation

    1. In a large bowl, mix the flour, yeast and salt.

    2. In a separate bowl, mix the warm water, the honey, the olive oil and the yogurt.

    3. Combine both mixtures using a fork or your hands and knead the dough for about 2 minutes. If the dough is sticking to your hands, then add a little more flour.

    4. Roll the dough into a ball and drizzle a little olive oil around the ball.

    5. Place the dough in a bowl and cover, leaving the dough to rise on the counter for 50ish minutes. Make sure your kitchen is warm!

    6. When the dough has risen, cut the ball in half. Each half is going to make 8-10 pieces of naan.

    7. Choose a half to begin working with and separate that into 8-10 equal balls of dough.

    8. Roll each ball into ovals that are about 1/4 inch thick. If you are adding any spices, now is the time to gently sprinkle and pat them into the dough.

    9. Heat a cast iron over medium heat. Cook one naan at a time; cook until bubbles appear on the surface, about a few minutes, then flip to the other side. Each side should appear golden brown once it is finished.

    10. Remove from the stove and brush with butter or olive oil and sprinkle with herbs. And enjoy!

    Tips

    1. Delicious herb garnishes include: minced chives, parsley or cilantro
