    Healthy Spice Cookies

    Every family needs an easy, hearty spice cookie recipe. This is a favorite in our family and my kids could eat five to six cookies in one sitting! They are especially delicious with a glass of fresh raw milk!


    Ready in 2ish hours

    Makes Several dozen cookies (it depends on the size of the rolls and how thinly the cookies are sliced.)



    Ingredients

    • 1 cup of brown sugar

    • 1 cup of molasses

    • 1 1/2 cups of butter

    • 2 eggs

    • 5 1/2 cups of Spelt or Einkorn flour

    • 2 tsp of ground cinnamon

    • 2 tsp of ground nutmeg

    • 3/4 tsp of ground clove

    • 4 tsp of baking powder

    • 1/2 of salt



    Preparation


    1. Mix the butter, molasses and brown sugar in a mixer until light and fluffy.

    2. Add the eggs and mix well.

    3. In a separate bowl, combine the dry ingredients together.

    4. Then, slowly add the dry ingredients to the mixer, adding it in bit by bit until everything is combined.

    5. Separate the dough into 2 mounds and roll each into a long log and wrap in parchment paper. Note: it is easiest to roll the dough into a log using the parchment paper in order that you do not get dough stuck to your hands.

    6. Refrigerate dough for 1-1 1/2 hours or until the dough has hardened.

    7. Preheat the oven to 375°F.

    8. Remove one of the logs and slice into 1/4-1/2 inch slices.

    9. Bake on a lightly greased cookie sheet for 10-12 minutes, or slightly longer if you cut thicker cookies.

    10. Bake until cookies are golden, then enjoy!


    Tips

    1. Add 1 cup of your favorite nut into the dough for an additional crunch to your cookie!
