Healthy Spice Cookies

Every family needs an easy, hearty spice cookie recipe. This is a favorite in our family and my kids could eat five to six cookies in one sitting! They are especially delicious with a glass of fresh raw milk!

Ready in 2ish hours
Makes Several dozen cookies (it depends on the size of the rolls and how thinly the cookies are sliced.)
Ingredients
1 cup of brown sugar
1 cup of molasses
1 1/2 cups of butter
2 eggs
5 1/2 cups of Spelt or Einkorn flour
2 tsp of ground cinnamon
2 tsp of ground nutmeg
3/4 tsp of ground clove
4 tsp of baking powder
1/2 of salt
Preparation
Mix the butter, molasses and brown sugar in a mixer until light and fluffy.
Add the eggs and mix well.
In a separate bowl, combine the dry ingredients together.
Then, slowly add the dry ingredients to the mixer, adding it in bit by bit until everything is combined.
Separate the dough into 2 mounds and roll each into a long log and wrap in parchment paper. Note: it is easiest to roll the dough into a log using the parchment paper in order that you do not get dough stuck to your hands.
Refrigerate dough for 1-1 1/2 hours or until the dough has hardened.
Preheat the oven to 375°F.
Remove one of the logs and slice into 1/4-1/2 inch slices.
Bake on a lightly greased cookie sheet for 10-12 minutes, or slightly longer if you cut thicker cookies.
Bake until cookies are golden, then enjoy!
Tips
Add 1 cup of your favorite nut into the dough for an additional crunch to your cookie!
