Belgian Waffles

This recipe creates wonderfully crisp waffles with a fluffy inside! Perfect for a Sunday brunch, these waffles are just like an authentic Belgian waffle. They are so delicious!

Ready in 40ish minutes
Serves 6-8 servings
Ingredients
2 1/4 cups of flour (Spelt or Einkorn is recommended for the nutrients)
1 tbsp of baking powder
1/2 tsp of salt
1 tsp of Ceylon cinnamon
2 large eggs (separated)
1/2 cup of coconut or olive oil
2 cups of milk (raw is best!)
1/4 cup of maple syrup
1 tsp of vanilla extract
Preparation
Preheat your waffle iron and be sure to grease it well with butter or oil.
In a large bowl, mix the flour, baking powder, salt, and cinnamon together.
In another bowl, whisk the egg whites until they form stiff peaks.
In a third bowl, whisk the egg yolks, oil, milk, syrup and vanilla.
Then, add the egg yolk mixture to the dry ingredients and mix well.
Next, fold in the egg whites. Do not over-mix.
Pour the batter onto the waffle iron (about 1/3-1/2 cup).
Cook and enjoy!
Tips
Whipped cream and toasted coconut, or a fruit medley, make excellent toppings!
